Suppli is a Roman street food made by hiding mozzarella inside tomato-sauced rice, coating it in breadcrumbs and frying until golden. The shaped balls freeze well before frying, making them a filling late-night snack.

Take a handful of the cooled rice, hide a cube of mozzarella in the centre and shape into a ball. Repeat with the remaining rice.
Coat the balls in flour, then dip in the beaten egg, then coat in breadcrumbs. Heat the oil over medium heat and fry for 8 minutes until golden on every side.
Do not shape the rice while still hot, or it will fall apart in your hands. Bury the mozzarella right in the centre, or it will leak out while frying if left near the edge. Allergens: contains gluten (breadcrumbs), milk and dairy (mozzarella), egg.
Adding a handful of grated parmesan to the rice makes the mixture saltier and more aromatic; reducing the salt by a pinch helps in that case.
