Coming from France's Basque region, milk jam is made by cooking leftover milk with sugar in a pressure cooker until it caramelizes. This confiture freezes well and is enjoyed spread on bread for a late-night treat or alongside party desserts.
Combine the milk, sugar and baking soda in the pressure cooker.
Seal the lid and cook over low heat for 40 minutes once it whistles.
Remove the pot from the heat and let the steam release naturally for 10 minutes.
Open the pot and whisk the mixture for 5 minutes until smooth.
The mixture will foam up when the baking soda is added, so don't overfill the pressure cooker. Allergens: contains milk and dairy.
For a darker caramel colour, extend the cooking time by 5 minutes.
