Tabil is a foundational Tunisian spice paste made by pounding toasted coriander and cumin seeds with garlic, chilli flakes and olive oil. Portioned and frozen, it keeps well for months.

How to make it?

Toast and grind the seeds

Toast the coriander and cumin seeds in a dry pan for 2 minutes until fragrant, then grind them in a mortar for 8 minutes.

Turn it into a paste

10 min

Add the garlic, chilli flakes, olive oil and salt and mix for 10 minutes until you have a smooth paste.

Portion and freeze

5 min

Divide the paste into small ice cube trays and place them in the freezer.

Reminder

Don't take your eyes off the pan while toasting the seeds — they can burn in a few seconds and leave the whole paste tasting bitter. Freezing it in small ice cube trays lets you thaw only as much as you need.

Tohumları tavada fazla kavurdum, dumanı çıkana kadar başka işle uğraşıp beklemişim; harç normalden daha koyulaştı ve tadı acımsı oldu. Bir dahakine tavadan gözümü hiç ayırmadan çok daha kısa süre kavuracağım.
