Tabil is a foundational Tunisian spice paste made by pounding toasted coriander and cumin seeds with garlic, chilli flakes and olive oil. Portioned and frozen, it keeps well for months.

Add the garlic, chilli flakes, olive oil and salt and mix for 10 minutes until you have a smooth paste.
Divide the paste into small ice cube trays and place them in the freezer.
Don't take your eyes off the pan while toasting the seeds — they can burn in a few seconds and leave the whole paste tasting bitter. Freezing it in small ice cube trays lets you thaw only as much as you need.
