Tajine Tounsi is a frittata-like dish from Tunisian cuisine, made by mixing beaten eggs with kaşar cheese, potato and parsley and baking in a deep dish. Named differently to avoid confusion with Moroccan tagines, it is made for both a late-night bite and breakfast.

How to make it?

Prepare the mixture

Whisk the eggs with the milk and salt, then stir in the potato, kaşar and parsley.

Bake

30 min

Pour the mixture into a greased deep dish and bake in an oven preheated to 180°C for 30 minutes until the centre still jiggles slightly.

Rest and serve

5 min

Remove from the oven and rest for 5 minutes, then slice and serve.

Reminder

Do not overboil the potato, or it will fall apart while baking. Do not overbake; take it out while the centre still jiggles slightly, since it keeps cooking as it rests. Allergens: contains egg, milk and dairy (kaşar).

Using white cheese instead of kaşar gives a saltier result; reducing the salt by a pinch helps in that case.
