Fry the garlic in olive oil until fragrant, then add the chopped tomato, cumin, chilli flakes and salt and simmer over low heat for 10 minutes.
Chop the charred peppers finely and add them to the tomato mixture, lightly mashing with a fork and stirring for 2 more minutes before serving.
If you do not peel the peppers thoroughly, the relish stays coarse; cover them for a few minutes after charring to let them steam, which makes the skins easier to remove.
Use a little less cumin and a bit more chilli flakes instead for a fresher but still spiced result.
