Talaş böreği, a pastry that has survived from Ottoman cuisine to today, is made by filling layered puff pastry with a mixture of ground meat and onion, sealing it into a triangle shape, and baking it. With its layered, crispy texture, it's a favorite starter for guest tables.

Important: Don't let the puff pastry sit too long at room temperature; if it warms up, the layers will stick together and won't give the desired crispness. Caution: Keep the edges thin when filling, as thickly sealed edges may not bake through evenly. Allergen: contains wheat (gluten) and egg.
Sprinkling nigella seeds over the börek before baking completes the traditional talaş börek's characteristic look and flavor.
