Melt the butter in a pot and sauté the shredded chicken and chickpeas for a few minutes. Add the drained rice and sauté until the grains are coated in the butter.
Add the hot chicken stock, salt and black pepper; once it comes to a boil, reduce to low heat, cover with a lid and cook until the liquid is absorbed.
Turn off the heat, cover the lid with a clean cloth and let it steam for 10 minutes. Fluff with a fork and serve.
Important: Make sure the chicken is fully cooked; using the poaching liquid as the rice's cooking water boosts the flavor. Contains gluten and dairy. Getting fluffy, separate rice grains depends on washing and letting the rice steep. Keeps in the fridge for a few days.
Straining the chicken poaching liquid and using it as the rice's cooking water gives a far more aromatic result than plain water. Adding chickpeas makes the rice more filling.
