Inspired by Thai satay sauces, this recipe simmers peanut butter with coconut milk and spices, then thickens it with brown rice flour. Using a whole-grain flour makes the sauce more nourishing.
Combine the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, garlic and chili flakes in a pot.
Warm on low heat, stirring, for five minutes.
Mix the brown rice flour with the water and add it to the pot, stirring often and cooking for five more minutes until thickened.
Let the sauce rest at room temperature for forty-five minutes; this lets the whole-grain flour fully thicken it.
Keep stirring constantly as you add the rice flour mixture, or it may go lumpy. Allergens: contains peanuts and soy (soy sauce).
If you store the sauce in the fridge overnight, it thickens further; just thin it out with a few spoonfuls of warm water before using.
