A daily classic on Iraqi tables, timman is made by cooking rice with cumin, cinnamon and bay leaf in a pressure cooker. Pressure cooking gets it ready much faster than the traditional method.

How to make it?

Soak the rice

60 min

Rinse the rice and soak it in warm water for sixty minutes.

Sauté the onion

5 min

Sauté the onion in olive oil together with the cumin and cinnamon for five minutes.

Cook in the pressure cooker

12 min

Add the drained rice, bay leaf, water and salt, and cook at high pressure in the pressure cooker for twelve minutes.

Let it rest

23 min

After releasing the pressure, let it rest covered for twenty-three minutes.

Reminder

Do not open the pressure cooker's lid before releasing the steam.

Do not forget to remove the bay leaf before serving; it leaves an unpleasant taste if eaten.
