A soft-textured, naturally sweet jam prepared from the honey-consistency flesh of ripe Trabzon persimmon. This fruit, which softens in winter months, adds a sweetness that requires little sugar to breakfast tables.

How to make it?

Prepare the dates

Peel the ripe persimmons and mash the flesh with a fork.

Mix with sugar

Mix the mashed persimmon pulp with the sugar and transfer to a pot.

Bring to a boil

Cook the mixture over medium heat, stirring frequently, until it thickens.

Thicken and jar it

Add the lemon juice and boil for a few more minutes. Important: check the consistency by dripping some onto a plate; fill sterilized jars while boiling hot and seal them.

Reminder

Important: For jam, wait until the dates are fully ripe and soft; unripe fruit leaves an astringent taste. Contains no flour, milk, or eggs; it is plant-based and gluten-free. Fill sterilized jars with the boiling jam and store in a cool, dark place.

Since Japanese persimmon (Trabzon hurması) is naturally very sweet, adding the sugar gradually while tasting keeps the balance right. A strip of lemon peel gives the jam a light freshness.
