Thailand's traditional fried cookie tua tad is made by kneading crushed peanuts with whole wheat flour and rice flour, shaping the dough into thin flat discs and deep-frying them in hot oil. If not flattened thin enough, the centre stays raw.

How to make it?

Make the dough

Knead the crushed peanuts, whole wheat flour, rice flour, coconut milk, sugar and salt together in a bowl until you have a sticky, dense dough.

Shape the discs

Pinch off small pieces of dough and flatten them by hand into discs about 3 mm thick; if they are not thin and even, the centre stays raw when fried.

Fry

7 min

Heat the sunflower oil over medium heat and fry the discs for 7 minutes until golden and crisp.

Serve

2 min

Drain on paper towel and serve once cooled.

Reminder

Make sure the oil is not too hot, or the outside will burn before the inside cooks through. Allergens: contains peanuts.
