Inspired by Tunisian spice markets, these kofta skewers blend ground beef with coriander and cumin, finished on the grill with fiery harissa. Served alongside whole wheat couscous, the plate becomes a filling, whole-grain meal.
Knead the ground beef with the grated onion, crushed garlic, ground coriander, cumin, black pepper and salt, then chill the mixture; cold paste holds the skewers together better.
Divide the paste into 8 equal portions and press each into a long oval shape around soaked wooden skewers; keep wetting your hands with cold water so the paste does not fall off.
Arrange the skewers on a well-preheated grill and turn them, cooking each side for 3-4 minutes until browned outside and still juicy inside; drizzle with olive oil just before grilling.
Pour an equal amount of boiling water over the whole wheat couscous, cover and let it sit for 5 minutes, then fluff with a fork, drizzle with harissa and plate alongside the skewers.
Keep wetting your hands with cold water while shaping the kofta onto the skewers, or the warming meat will stick and lose its shape. Allergens: contains wheat (gluten).
