This refreshing sauce, prepared by combining grated cucumber with strained yogurt and garlic, is the classic accompaniment to gyros and souvlaki in Greek cuisine. With its cooling character, it is especially popular at tables during summer.

How to make it?

Prepare the cucumber

Grate the cucumber and sprinkle a pinch of salt over it; after resting for 10 minutes, squeeze it firmly by hand to drain its liquid thoroughly.

Mix with the yogurt

Mix the drained cucumber thoroughly with strained yogurt and crushed garlic.

Season and let it rest

Add the olive oil, optional fresh mint, and salt, mix, then let the sauce rest in the refrigerator for at least 20 minutes.

Reminder

Allergen: contains dairy products. Important: if you add the grated cucumber to the yogurt without squeezing and draining its water well, the sauce will become watery quickly. Note: prepare the sauce at least half an hour before serving and let it rest in the refrigerator, the flavors meld noticeably during this time.

Lightly rubbing the cucumber with salt and letting it rest for 10 minutes lets most of its water drain out on its own; this preliminary step makes the sauce's consistency much thicker and more stable.
