Dried peas simmered with carrot and tomato paste in a pressure cooker and finished with olive oil, this dish needs no overnight soaking and packs well for a lunchbox. It can be served warm or cold.

Step by Step

How to make it?

1

Sauté the vegetables

5 min

Sauté the onion in olive oil until translucent, add the diced carrot and cook for 5 more minutes.

2

Add the remaining ingredients

3 min

Add the rinsed dried peas, tomato paste, salt, pepper, sugar and water, then close the pressure cooker lid.

3

Pressure-cook

45 min

Cook on low heat for 35 minutes from the moment the cooker starts hissing, then let the steam release naturally for another 10 minutes.

4

Serve

5 min

Drain the peas, drizzle with a final swirl of olive oil and serve warm or cold.

Reminder

Since the dried peas are not pre-soaked, stick closely to the cooking time or the centres will stay firm.
