A thinly rolled unleavened dough is cut into strips, twisted through a slit in the middle, and baked instead of fried, making vergun, the crisp cookie of Ukrainian carnival tables. Baking it gives a lower-calorie version.

Cover the dough and let it rest for 20 minutes.
Roll the dough thin and cut into long strips, slit the middle of each strip and pull one end through to twist.
Bake the strips in an oven preheated to 190°C for 15 minutes until golden, then dust with powdered sugar once cool.
If you cut strips before resting the dough, it will tear easily while twisting. Allergens: contains gluten (flour), egg.
Classic vergun is usually deep-fried; we chose baking to cut calories. If you prefer frying, it browns in about the same time.
