Vignole, the classic of Italian spring cooking, is made by braising artichoke, peas and fava beans together in olive oil in a pressure cooker. Balancing the three vegetables' different cooking speeds is the most delicate part of this recipe.

Sauté the onion

Sauté the onion in olive oil for 5 minutes.

Add the vegetables

Add the artichoke, peas and fava beans and sauté for 3 more minutes.

Cook

Add the lemon juice and salt, seal the pressure cooker lid, and once it reaches pressure, cook for 6 minutes.

Serve

Release the pressure and serve.

Reminder

Start sautéing the artichoke before the peas, or the peas will overcook and turn mushy.
