A beloved cake from Turkish pastry shops, this wet cake is made by baking a plain sponge and thoroughly soaking it in a syrup made from sour cherry juice. Dripping with syrup when sliced, this cake is a favourite at large party tables.

Pour the batter into a greased tin and bake in an oven preheated to 175°C for 30 minutes, until a skewer inserted in the centre comes out clean.
Bring the sour cherry juice and sugar to a boil in a pot and simmer for 5 minutes to thicken.
Slowly pour the warm syrup over the hot cake, letting it fully absorb.
Pour the syrup slowly over the warm cake in several additions, or most of it will overflow the edges. Allergens: contains wheat (gluten), egg and milk.
Make sure the cake and syrup are at similar temperatures before pouring; hot syrup poured over a cold cake absorbs unevenly.
