Prepare the Cherries

Pitted sour cherries are layered with sugar and briefly boiled in a pressure cooker to make Russian cuisine's classic varenye. The fruit stays whole and glossy in its own syrup, and the preserve is traditionally served in its own small dish alongside tea.
Combine the pitted cherries with the sugar and lemon juice in the pressure cooker.
Close the pressure cooker lid and bring it to the boil over medium heat, then once it starts hissing, cook over low heat for 15 minutes.
Turn off the heat and wait 10 minutes for the pressure to release naturally, then open the lid.
Boil the syrup uncovered for another 10 minutes to thicken it, then fill sterile jars while hot and cool them upside down.
Do not stir the syrup while it boils uncovered, or the cherries will break apart; gently swirling the pot is enough. Cooling the jars upside down helps the lids seal tightly.
Out of season, frozen sour cherries work too; account for the extra liquid they release as they thaw and simply shorten the cooking time by 5 minutes, keeping the sugar amount the same.
