One of Turkish cuisine's more demanding pastries, yaprak böreği is made by hand-rolling paper-thin sheets, layering them with melted butter, and baking until crisp in distinct layers. Rolling the sheets to an even thinness is the step that takes the most practice.
Knead the flour, egg, warm water, oil and salt into a smooth dough.
Cover the dough with cling film and rest it at room temperature for 30 minutes.
Divide the dough into equal pieces and roll them out, dusted with cornstarch, into paper-thin sheets.
Brush the sheets with melted butter and stack them, shaping them into a large baking tray.
Bake in an oven preheated to 190°C for 25 minutes until the layers turn golden.
Cover the rolled sheets with a damp cloth as you go; left uncovered, they dry out and crack quickly. Allergens: contains wheat (gluten), egg, milk and dairy (butter).
If you freeze the layered, unbaked sheets, you can bake them straight from the freezer whenever you need them.
