Egg drop soup is one of Chinese cuisine's quickest soups, made by pouring beaten egg in a thin stream into simmering chicken stock so it forms silky ribbons. Lightly thickened with cornflour, the soup holds the egg ribbons together without them falling apart. With no dairy or nuts in the recipe, it's also a safe breakfast soup for children with allergies.
Bring the chicken stock to a simmer with the ginger and salt.
Stir in the dissolved cornflour and keep simmering for 2 minutes until the soup thickens slightly.
Pour the beaten egg into the soup in a thin stream while gently stirring with a fork so it sets into ribbons.
Remove from the heat, scatter over the spring onion and serve hot.
Stir gently with a fork while pouring in the egg; stirring too fast breaks up the ribbons and clouds the soup. Allergens: contains egg.
Adding a teaspoon of sesame oil gives the soup the toasted aroma typical of Chinese restaurants; adding it right before serving makes the scent more pronounced.
