Ladle a scoop of the boiling water into the egg mixture while whisking, adding it slowly; this tempering step keeps the egg from curdling.
Pour the warmed mixture back into the pan, add the salt and cook over low heat, stirring constantly, for 5 minutes until it thickens; do not let it boil.
Never pour the hot water into the egg all at once; if you do not add it in a thin, whisked stream, the egg will curdle. Allergens: contains wheat (gluten) and egg.
