Egg yolk whisked with lemon juice and flour, then slowly warmed with hot water, makes this tempering sauce, one of Turkish cuisine's classic tangy techniques. If the warming is not done in the right order the egg curdles, which is why so few ingredients still demand real attention.

Whisk the base

Whisk the egg yolk together with the lemon juice and flour until smooth.

Slowly warm it up

Ladle a scoop of the boiling water into the egg mixture while whisking, adding it slowly; this tempering step keeps the egg from curdling.

Return it to the pan

Pour the warmed mixture back into the pan, add the salt and cook over low heat, stirring constantly, for 5 minutes until it thickens; do not let it boil.

Reminder

Never pour the hot water into the egg all at once; if you do not add it in a thin, whisked stream, the egg will curdle. Allergens: contains wheat (gluten) and egg.
