This simple sauce, prepared in seconds by combining the za'atar spice blend with olive oil, is the traditional dipping accompaniment for warm bread in Jordanian cuisine. With notes of thyme, sesame and sumac, it adds a light start to the table.

Step by Step

How to make it?

1

Mix the ingredients

2 min

Mix the olive oil and za'atar in a small bowl.

2

Taste and adjust

2 min

Add the optional salt and taste; since the salt ratio can vary by za'atar brand, adjust accordingly.

3

Serve

1 min

Transfer the sauce to a small bowl and serve immediately alongside warm bread.

Reminder

Allergen: contains sesame; those with a sesame allergy should not consume it. Important: since the salt ratio of za'atar mix varies by brand, be sure to taste before adding salt. Note: don't prepare the sauce in advance and let it sit, over time the olive oil can absorb too much of the za'atar's aroma and dull its flavor.

Editor's Note Editörün Notu

Adding za'atar to the olive oil right before serving is the most practical way to preserve the spice blend's vivid aroma; za'atar mixed in too early can lose its freshness over time.
