Zeytinyağlı ahtapot is an Aegean-style meze made by simmering octopus in its own liquid until tender, then serving it cold with olive oil, lemon and garlic. Getting the poaching time right matters, since overcooked octopus turns rubbery.
Wash the cleaned octopus thoroughly under cold water.
Put the octopus in a wide pot with the bay leaves and simmer it covered over low heat for 40 minutes until it releases its own liquid; do not add water, it cooks in its own juices.
Remove the cooked octopus from its liquid and let it cool at room temperature.
Chop the cooled octopus into bite-sized pieces and toss it with the olive oil, lemon juice, crushed garlic, thyme and salt.
Do not keep lifting the lid to check on it while it simmers; every time you do, steam escapes and the cooking time stretches out. The octopus is done once a fork slides in easily; stopping too early leaves the meat tough. Allergens: contains shellfish.
Adding an extra tablespoon of lemon juice gives the meze a fresher edge; in that case cutting the salt back slightly keeps the sourness from taking over.
