Sauté the onion
5 minIn olive oil, lightly sauté finely chopped onion.
A classic Aegean-style olive-oil dish where okra is slowly cooked with tomato and olive oil, served with lemon slices. This recipe, which can be served both cold and at room temperature, is among the light options of summer tables.
In olive oil, lightly sauté finely chopped onion.
Add grated tomato and sauté for a few minutes, then add the sugar and salt.
Arrange the trimmed okra in the pot and drizzle lemon juice over it; cook over low heat, gently shaking the pot. Note: Do not mash the okra with a spoon while stirring — shaking the pot is enough to keep it from falling apart.
Remove from heat and, once it reaches room temperature, serve with lemon slices.
Important: When washing the okra, don't trim the stems too short, and soak them in vinegar water for a few minutes; this reduces sliminess. Allergen: contains no common allergens.
Gently shaking the pot instead of stirring while cooking the okra keeps the pods from falling apart as they cook.
