Add the washed bulgur and stir for a few minutes.
Add hot water and salt, then cook over low heat until the liquid is absorbed.
Remove from heat, let rest for 5 minutes, then stir and serve.
Important: Sauté the onion thoroughly before adding the bulgur — the raw onion smell can otherwise seep into the pilaf.
If you soak the bulgur in hot water rather than boiling water before cooking, the grains stay firmer without falling apart.
