One of the Aegean's quick olive-oil dishes, this recipe cooks zucchini and fine bulgur together in the same pot for a filling, whole-grain lunch. The bulgur soaks up the courgette's own moisture, making it a diabetes-friendly, low-GI choice.
Cook the onion in olive oil for 2 minutes until it turns translucent.
Add the diced zucchini and grated tomato and cook, stirring, for 3 minutes until the zucchini releases its liquid.
Add the fine bulgur, salt, pepper and half a cup of hot water, then simmer over low heat for 8 minutes until the liquid is absorbed.
Remove from the heat, cover and let it steam for 2 minutes, then sprinkle with dill and serve warm.
Adding the water while it's still boiling shortens the cooking time. Allergens: contains bulgur (gluten).
If you use coarser bulgur instead of the fine grade, extend the cooking time by 5 minutes — the grain stays chunkier.
