Inspired by Syrian cuisine's simple olive-oil dishes, this recipe cooks leftover purslane together with bulgur in olive oil. Its whole-grain composition makes it both filling and nourishing as a main dish.
Sauté the onion in olive oil for five minutes.
Add the tomato and purslane and cook for ten minutes.
Add the fine bulgur and salt and cook over low heat for fifteen minutes, until the liquid is absorbed.
Drizzle with lemon juice and serve warm.
Wash the purslane thoroughly before adding it; leftover grit can be unpleasant to bite into. Allergens: contains gluten (bulgur).
If you do not have much purslane, mixing in some spinach also gives a similar result.
