One of Armenian cuisine's no-cook meze dishes, this bean spread puts leftover canned or boiled white beans to use, mashed with olive oil, lemon and garlic. Ready in a few minutes without turning on the stove, it can also be portioned into small containers and frozen.
Drain the boiled or canned beans and rinse them well.
Mash the beans with a fork or in a food processor, then mix in the olive oil, lemon juice, crushed garlic, salt and pepper until smooth but still a little textured.
Transfer the spread to a bowl and scatter parsley on top; portion any extra into small containers and freeze.
If you do not drain and rinse the beans thoroughly before mashing, the spread turns watery. Thaw any frozen portions in the fridge and stir well before serving.
Use less garlic and add a pinch of cumin instead for a milder spread that still has plenty of character.
