Sauté the onion
5 minIn olive oil, sauté finely chopped onion until softened.
This olive-oil dish with zucchini, rice, and dill is a light and practical recipe made during the abundant summer zucchini season. It becomes part of summer tables when served cold, and of everyday meal tables when served warm.
In olive oil, sauté finely chopped onion until softened.
Add diced zucchini and grated tomato, and sauté for a few minutes.
Add washed rice and water, then add the salt; cook over low heat until the zucchini and rice are soft. Note: Do not chop the zucchini too small, otherwise it may fall apart and release its water.
Once lukewarm, serve sprinkled with dill.
Important: If you chop the zucchini too small, it may mash and release its liquid during cooking, so prefer medium-sized cubes. Allergen: contains no common allergens.
Adding the rice halfway through cooking lets it absorb the zucchini's liquid, improving the consistency.
