Root vegetables like carrot, celeriac and radish are simmered in olive oil and served cold, making a low-glycaemic olive oil dish. It brings a diabetes-friendly, filling option to brunch spreads.

Step by Step

How to make it?

1

Prepare the Vegetables

15 min

Cut the carrot, celeriac and radish into similarly sized pieces.

2

Sauté

10 min

Sauté the chopped onion in olive oil until pink-gold, then add the vegetables.

3

Simmer Gently

30 min

Add the sugar and cook covered over low heat for 30 minutes until the vegetables are tender.

4

Cool and Serve

5 min

Remove from heat and let cool to room temperature before serving cold.

Reminder

Drop the celeriac into lemon water right after cutting, or it will darken quickly.

Editor's Note Editörün Notu

Turnip can be added instead of radish; the sweet-sharp balance stays similar.
