A classic pilaki-style olive-oil dish where dried beans meet carrot and potato in olive oil and are served cold. It accompanies tables as a refreshing dish in summer and a hearty main dish in winter.
Drain the soaked beans and boil in plenty of water until tender.
Sauté the onion and carrot in olive oil until softened, add the tomato paste and sauté a few more minutes.
Drain the boiled beans and add to the sautéed vegetables, then add the potato and add enough water to cover. Caution: add the potato only after the beans have softened, otherwise it may fall apart too early.
Cook the mixture over low heat until the liquid reduces slightly, remove from heat and let cool; serve with lemon slices.
Important: Soak the beans in water the night before and drain; the soaking time is not included in the cooking time. Note: If you add the potatoes too early they may fall apart, so add them after the beans have softened. Allergen: contains no common allergens.
If you prepare the pilaki a day ahead and let it rest in the refrigerator, the flavor becomes even more pronounced, and you can serve it cold.
