A seasonal olive-oil dish in which fresh green chickpeas available in spring are shelled and lightly cooked with onion and dill. With a softer texture than dried chickpeas and a mildly sweet taste, this recipe is one of spring tables' special flavors.

Add the shelled fresh chickpeas and stir for a few minutes.
Add salt and a splash of water, then cook over low heat until softened. Note: fresh chickpeas cook much faster than dried ones, so do not overcook.
Remove from heat, sprinkle finely chopped dill on top, and serve warm.
Important: Wetting your hands makes it easier to remove fresh chickpeas from their pods. Caution: Since fresh chickpeas cook much faster than dried ones, don't extend the cooking time. Allergen: contains no common allergen.
While cooking fresh chickpeas, boiling a few of the pods together with the water can lend the dish a light aroma — afterward, pick out the pods and discard them.
