A little-known but delicious winter olive-oil dish where Jerusalem artichoke is slowly cooked with lemon and olive oil. With its lightly sweet and starchy texture, it offers a different vegetable experience.

How to make it?

Sauté the onion

In olive oil, lightly sauté finely chopped onion and carrot.

Add the Jerusalem artichoke

Drain the Jerusalem artichokes that have been soaking in lemon water and add them, stirring for a few minutes. Note: Chop the Jerusalem artichokes coarsely — small pieces may fall apart while cooking.

Add water and lemon juice and cook

Add water, lemon juice, sugar and salt, then cook over low heat until the Jerusalem artichokes are soft.

Serve

Serve once lukewarm or chilled.

Reminder

Important: Put the peeled Jerusalem artichokes straight into lemon water, otherwise they'll darken quickly. Allergen: contains no common allergens.
