A tangy Aegean-style olive-oil dish where unripe green tomatoes are cooked in olive oil with rice and onion. It is a practical and economical option for making use of late-summer garden produce.

Sauté the onion

In olive oil, sauté finely chopped onion until softened.

Add the green tomato

Add coarsely chopped green tomatoes and sauté for a few minutes.

Add the rice, sugar, and water

Add the rice, sugar, salt and water, then cook over low heat until the tomatoes and rice are soft. Note: Since green tomatoes are sour, adjust the amount of sugar to taste.

Serve

Serve at room temperature or chilled.
