Tulum cheese is a sharp cheese made by pressing cheese curd into a tulum, a casing traditionally made from goat or sheep skin, and ripening it there. The crumbled, salted curd ages inside the tulum without air exposure. Erzincan and İzmir tulum are the most well-known varieties.
