How Many Minutes Do Frozen Börek and Poğaça Take Straight From the Freezer?

Frozen börek and poğaça, baked straight from the freezer without thawing in a preheated 180-190°C oven, take about 35 to 40 minutes; that's roughly 60-70% longer than the same item fresh or thawed.

Why can it go into the oven frozen?

Unlike ground-meat dishes, pastry items are more forgiving on internal-temperature safety; börek and poğaça dough is already made from ingredients that are either pre-cooked or safe to cook, so the real challenge isn't safety, it's getting heat to reach the center of a thick, frozen dough. That's why the time stretches out while the temperature runs a touch lower than for fresh dough.

Why does the temperature drop?

Fresh dough usually bakes at 200-210°C, while frozen dough bakes at a somewhat lower 180-190°C; that keeps the outside from over-browning while the inside is still frozen solid. Frozen börek baked at a high temperature can end up burnt outside and raw inside.

How do you keep the inside from staying raw?

Even if the top looks sufficiently browned once the time is up, it's worth checking the thickest piece's center with a fork; if the inside is still cold or doughy, keep baking another 5 to 10 minutes, tenting it with foil if needed. Foil slows further browning on top while letting the inside finish cooking.

Does thawing first give a better result?

Börek or poğaça thawed in the fridge overnight bakes in almost the same time as fresh dough (20 to 25 minutes) and browns more evenly; that method just takes planning ahead. If you need it baked on short notice, going straight from frozen is a practical alternative.

How does size change the timing?

Small, bite-size poğaça bakes in 25 to 30 minutes even from frozen, while a large, layered dish like su böreği can take up to 45 to 50 minutes. Thicker, layered items simply need more time for heat to reach the center.

Can you pre-warm it in the microwave?

Briefly microwaving frozen dough before baking isn't recommended; the microwave can soften the outside into a rubbery texture, which works against the crisp result you want from the oven. Going straight into the oven from frozen, or thawing overnight in the fridge, are the two most reliable methods.

Should the tray be lined with parchment?

Frozen pastry placed directly on a bare tray can stick to the bottom over such a long bake; parchment paper or a lightly greased tray removes that risk. Without parchment, separate the pastry from the tray with a spatula while it's still warm right after baking, waiting until it's fully cooled can cause it to tear.

Dondurulmuş böreği doğrudan verdim, süre dolunca dışı simsiyah yanmıştı ama içi hâlâ donmuş gibiydi, tarif hiç işe yaramadı bence, belki fırınım daha farklı ısıtıyordur bilmiyorum.

180-190°C aralığının altında kalmış olabilirsiniz ya da fırınınız gerçekte belirttiğinden sıcak çalışıyor olabilir; bir dahaki sefere 170°C'den başlayıp süreyi 45 dakikaya kadar uzatmayı ve arada kontrol etmeyi deneyin.

35 dakika dedik ama benim büyük su böreği tepsim tam 50 dakika sürdü, belki de büyük boy olduğu için farkı hesaba katmamışım, ortasını kontrol edince anladım daha erkenmiş.
