A classic cheese poğaça made by filling soft, unleavened dough with white cheese and baking it until it rises. A beloved pastry for breakfast and teatime, these poğaças are favorites for keeping their soft texture even the next day.
Mix lukewarm milk, vegetable oil, yogurt, egg, and salt. Sift in the baking powder along with the flour, adding it gradually, and knead into a soft, non-sticky dough. Let rest for 15 minutes.
Prepare the filling by mixing crumbled white cheese with chopped parsley.
Take walnut-sized pieces of dough, flatten them in your hand, place the cheese filling in the center, close it up, and shape by pressing lightly. Arrange them with space in between on a parchment-lined tray.
Brush the poğaça with egg yolk and sprinkle with sesame seeds. Bake in a preheated 180°C (356°F) oven for 25 minutes, until golden on top.
Important: Adding yogurt and vegetable oil to the dough keeps the poğaça soft for days. Caution: Preheat the oven and don't arrange the poğaça too close together; they shouldn't stick to each other as they rise. Contains gluten (flour), egg, and dairy (cheese, yogurt, milk).
The egg yolk you brush on top gives the poğaça a glossy, appetizing color. Sprinkling sesame and nigella seeds enriches it both visually and in flavor.
