A favorite Lebanese street food, arayes are sandwiches made by spreading a thin layer of spiced ground meat inside pita bread and grilling it until crisp. They are easy to pack for a picnic and eat by hand.

How to make it?

Prepare the filling

Knead the ground meat thoroughly with the finely chopped onion, parsley, sumac, Turkish red pepper flakes, and salt.

Fill the pita

Cut the pita in half and spread a thin layer of the ground meat filling inside each half.

Grill

Brush the stuffed pita halves with olive oil. Grill them on a grill pan for 5 minutes per side, 10 minutes total, until the ground meat is cooked through and the pita is crisp.

Reminder

Do not spread the filling too thickly inside the pita, or the bread may brown too much before the ground meat cooks through. Contains an allergen: gluten (pita).

Arayes'i ilk kez yapıyordum, kıyma harcını pideye çok kalın yaydığım için ortası pişerken kenarları fazla kızardı; ikinci seferde ince bir tabaka halinde yayınca hem kıyma hem pide aynı anda mükemmel çıktı.
