Yeast dough is shaped into a ring, dipped in grape molasses and coated with sesame seeds, then filled with Kashar cheese (Turkish semi-hard cheese) to make a sandwich. Shaping the ring neatly and getting the boiling and baking sequence right call for real baking skill.

How to make it?

Make the dough

Knead the flour, yeast, lukewarm water, sugar and salt into a dough. Cover with plastic wrap and leave to rise for 20 minutes.

Shape into a ring and boil

10 min

Shape the dough into a long rope and join the ends firmly to form a ring. Boil in the water mixed with grape molasses for 30 seconds.

Coat with sesame seeds and bake

20 min

Coat the ring with sesame seeds and bake in an oven preheated to 200°C / 390°F for 20 minutes, until golden and crisp.

Fill the sandwich

5 min

Cut the cooled ring horizontally and fill with kashar cheese and tomato. Serve.

Reminder

Join the ends of the dough firmly when shaping the ring. A loose join may come apart during baking. Allergens: contains wheat (gluten), sesame, and milk and dairy products (Kashar cheese).

Halkayı şekillendirirken iki ucu birleştirmek ilk seferimde biraz zor geldi, 30 saniyelik haşlama süresini biraz uzatsam kabuk daha mı çıtır olur? Pekmez yerine bal kullansam tat nasıl değişir merak ediyorum.

Haşlama süresini uzatabilirsiniz, 45 saniyeye çıkarmak kabuğu biraz daha koyulaştırır ama çok uzatmayın, hamur suya doyabilir. Bal kullanırsanız pekmezin toprağımsı notunu kaybedersiniz ama daha hafif bir tatlılık elde edersiniz.
