Sandwiches, burgers, and wraps
This practical street food from Durban is made by filling a hollowed-out loaf with a spiced chicken curry. The bread serves as both bowl and food, soaking up the extra sauce for a hearty meal.
Sauté the onion and garlic in oil over medium heat until softened. Add the curry powder and turmeric and cook for 1 minute.
Add the chicken and cook for 6 minutes, turning until it is browned on all sides. Add the grated tomato.
Add the potatoes, water, and salt. Cover and simmer over low heat for 30 minutes, until the potatoes are tender and the sauce has thickened.
Cut off the top of each loaf and hollow out the center to make a bowl. Set the removed bread aside.
Fill the hollowed loaves with the hot curry and serve with the reserved bread pieces.
The curry can be refrigerated for up to 3 days. Fill the bread just before serving, or it will soften and fall apart.
