Created for the royal ceremony in 1953, coronation chicken combines boiled chicken with curry-flavored mayonnaise, here used to fill sandwiches for a crowd. Apricots and almonds add a balancing sweetness to one of Britain's favorite buffet sandwiches.

How to make it?

Boil the chicken

15 min

Bring the chicken breast and bay leaf to the boil in water and cook for 15 minutes. Remove the chicken from the liquid and, once cool, shred it by hand.

Mix the sauce

10 min

Mix the mayonnaise, curry powder, apricots, almonds, lemon juice and salt in a bowl. Add the shredded chicken and toss together.

Rest

60 min

Refrigerate the mixture for at least 1 hour to let the flavors come together.

Make the sandwiches

5 min

Generously fill the bread slices with the chicken mixture. Cut into triangles and arrange on plates.

Refrigerate the prepared sauce for at least 1 hour to let the flavors come together. Allergens: contains wheat (gluten), egg, and nuts (almonds).

Bademi bulamadığım için ceviz kullandım, tat gerçekten daha yoğun ve hafif buruk oldu ama karışımın kıvamını bozmadı. Kayısıyı biraz azaltıp cevizle dengeledim, sandviç yine de kalabalık sofrada hızla bitti.
