Cover the mixture with plastic wrap and refrigerate it for 30 minutes. The rested kofta mixture holds its shape on the grill.
Shape the mixture into finger-thick kofta. Grill them for 8 minutes on a preheated grill, turning so all sides brown.
Place the grilled kofta, tomato slices, onion rings, and parsley on the lavash, then roll it tightly.
If you put the kofta on the grill without letting the mixture rest, they are more likely to fall apart during cooking. Do not skip the 30-minute rest. Contains wheat (gluten).
