This sauce thickens pressure-cooked lamb stock with butter and flour, reducing hours of traditional cooking to half an hour and adding richness to one meal packed for lunch.

Add the tomato paste, bay leaf, peppercorns, and salt, then add enough water to cover. Close the lid. Once the cooker starts whistling, lower the heat and cook for 25 minutes.
Turn off the heat and let the pressure release naturally. Do not force the lid open.
Strain the stock through a fine-mesh strainer and discard the bones and vegetables. Return the liquid to the stove, add 1 spoonful of butter mashed with flour, and simmer over low heat for 10 minutes, until thickened.
Never force the pressure cooker to release pressure. Opening the lid while the stock is still boiling is dangerous and can also make the liquid cloudy. Allergens: Contains wheat (gluten) and milk and dairy products (butter).
