A Lebanese street food made by marinating chicken with garlic, lemon and cumin, then frying it over high heat. Wrapped in lavash flatbread with garlic yogurt sauce and fresh vegetables, it makes a filling meal.
Mix the chicken leg meat with the yogurt, half the garlic, lemon juice, cumin, Turkish red pepper flakes and olive oil. Cover and refrigerate for 30 minutes.
Heat a large frying pan over high heat and cook the marinated chicken for 12 minutes, until well browned on both sides. Cut into thin strips.
Mix the remaining garlic with yogurt and season with salt.
Spread the sauce over the lavash flatbread, add the lettuce, tomato and chicken and roll up tightly.
Leave the chicken to marinate for at least 30 minutes before cooking. A shorter marinade will not allow the spices to penetrate. Allergens: contains wheat (gluten, in the lavash) and dairy (yogurt).
