Place the pastirma slices in a skillet and cook over medium heat for 2–3 minutes, until they release their excess fat.
Crack the eggs over the cooked pastirma and cook over low heat until they reach your preferred doneness.
Place the kashar cheese on one slice of sandwich bread, top with the eggs and pastirma, then cover with the other slice.
Toast the sandwich in a sandwich press for 3–4 minutes, until both sides are golden and the cheese has melted.
