Cook the onion and bell pepper in the oil over medium heat for 8 minutes, until softened. Set aside.
In the same skillet, quickly sauté the beef over high heat for 3–4 minutes. Season with salt and black pepper.
Return the vegetables to the skillet and place the cheese on top. Cover and cook over low heat for 2–3 minutes, until the cheese melts.
Fill the long rolls with the mixture and serve hot.
Best eaten fresh. Store the components separately in the refrigerator for up to 2 days.
