A hearty American-style sandwich made with chicken thighs slow-cooked in the oven, shredded with a fork, and tossed with homemade barbecue sauce. It is also an easy way to use leftover chicken.
Rub the chicken thighs with the tomato paste, honey, vinegar, ground red pepper, and salt. Let stand for 15 minutes.
Cover the chicken thighs with foil and bake in an oven preheated to 180°C / 355°F for 70 minutes, until the meat separates easily from the bone.
Let the chicken thighs rest for 10 minutes after baking. Use two forks to pull the meat into strands, then toss it with the remaining sauce.
Place the shredded chicken on the bottom half of a burger bun, add the pickled cabbage, and close with the top half.
Important: Make sure the chicken reaches an internal temperature of 74°C / 165°F; otherwise, the fibers may become tough when you shred it. Allergen: Contains gluten from the bread; barbecue sauce is high in sugar.
