Lay the thin lavash on a flat surface and spread a thin layer of walnut mixture over it.
Arrange the sliced sulguni cheese near one edge of the lavash. Sprinkle with cilantro leaves and red pepper flakes, then drizzle with lemon juice.
Starting at the cheese-covered edge, roll the lavash tightly. Trim both ends, cut diagonally through the center, and arrange on a serving plate.
Do not roll the lavash too tightly, or the filling beneath the cheese may spill out and the wrap may fall apart.
