Inspired by the yoghurt sauce served with Turkish mantı, this pasta is made with strained yoghurt and red pepper flakes toasted in butter. Far lighter than a cream sauce, the yoghurt base brings something filling but not heavy to the brunch table.

Mix the strained yoghurt with the crushed garlic and salt, then fold it into the hot pasta off the heat.
Melt the butter in a small pan, add the pepper flakes, toast for 5 minutes until it foams slightly, drizzle over the yoghurt pasta, and serve with dried mint.
Add the yoghurt to the pasta once it's off the heat; adding it straight into boiling water will make it curdle. Keep the heat low while toasting the butter with the pepper flakes so it doesn't burn. Allergens: contains wheat (gluten) and dairy (yoghurt, butter).
For an even lighter version, you can replace half the butter with olive oil; the heat and flavor balance stay almost the same.
