South Africa's Indian-rooted pickle, atchar, is rolled with carrot and chickpeas in lettuce leaves for a quick, low-calorie wrap. Requiring no cooking, this dish is a ready spicy snack.

How to make it?

Prepare the filling

Wash and dry the lettuce leaves, then mix the grated carrot and boiled chickpeas together in a bowl.

Fill the leaves

Spoon the spicy atchar and the carrot-chickpea mixture into the centre of each lettuce leaf.

Roll and serve

Drizzle with lemon juice, scatter over the fresh coriander, roll up the leaves and serve right away.

Reminder

Dry the lettuce leaves thoroughly before filling them, or the atchar's liquid will soften and tear the leaf.
